SKIPPY® Peanut Butter BBQ Chicken Melt may be the best thing to happen to bread, ever. Grab some of that chicken left over from last night and make something amazing.

  • 4 slices wholemeal bread, toasted
  • 60g SKIPPY® Smooth Peanut Butter Spread
  • 3 tablespoons barbecue sauce
  • 2 tablespoons orange juice
  • 250g shredded cooked chicken
  • 40g grated cheddar cheese


  1. Preheat the oven to 200 °C.
  2. Arrange the toast on a baking tray.
  3. In a medium bowl, combine the peanut butter, barbecue sauce and orange juice; mix well. Reserve half of the mixture in a small bowl, for dipping.
  4. Stir the chicken into the remaining mixture. Spread the chicken mixture evenly over the toast; sprinkle with cheese. Bake for 5 minutes or until the cheese is melted and the sandwich is warm. Serve with the remaining dipping sauce.
